The cuisine of old Ceylon, now known as Sri Lanka, has been influenced by many cultures, including the Dutch, Portuguese, English, Arabs, Malays, Moors, and Indians. As a result, the food is incredibly colorful, featuring curries that range from yellow to deep brown, vibrant green vegetables, and bright sambals. Spices like cinnamon further contribute to the depth of flavor.

Old Ceylon, now called Sri Lanka, is renowned for its diverse cuisine, which revolves around various types of rice and the ubiquitous coconut. In Sinhalese, Pol Lunu translates directly to Coconut Salt, which adds a distinctive flavor to dishes such as curry fish or meat, vegetables, lentils, and fruits.
